Ingredients
  

  • 3 cups cooked pasta such as rotini or penne
  • 5 vine-ripened tomatoes chopped
  • 2 green onions chopped
  • 1 tbsp red onion finely chopped
  • 1 to 2 cloves garlic minced
  • 1 bunch fresh basil chopped
  • 1 tbsp olive oil
  • 2 to 4 tsp balsamic vinegar adjusted to taste
  • 1/3 cup shredded Parmesan cheese
  • Salt to taste
  • Fresh ground pepper to taste

Instructions
 

  • Combine the veggies and cheese. In a large bowl, mix together the chopped tomatoes, green onions, red onion, minced garlic, and chopped basil. Drizzle in the olive oil and balsamic vinegar. Add the shredded Parmesan cheese and toss to combine all the ingredients.

  • Let the flavors meld. Allow the mixture to sit for at least 15 minutes so the flavors can marry together, creating a more robust taste.
