Ingredients
  

  • 5 pounds russet potatoes peeled and cubed
  • 8 tablespoons unsalted butter melted, plus 2 tablespoons for topping
  • 8 ounces cream cheese softened
  • 1 cup half & half warmed
  • 1/2 teaspoon salt plus more to taste
  • 1/4 teaspoon black pepper
  • Chives chopped for garnish (optional)

Instructions
 

  • Preheat your oven to 350°F.
  • Place the peeled and cubed potatoes in a large pot, cover with water, and season with salt. Bring to a boil and cook until potatoes are tender, about 15 minutes.

  • Drain the potatoes and return them to the pot. Over low heat, allow them to dry out for a few minutes, shaking the pot occasionally.
  • Transfer the potatoes to a large mixing bowl. Using a potato masher or electric mixer, mash the potatoes until they start to become smooth.
    Cream cheese, butter, salt, and spices for baking recipes or cooking.
  • Gradually mix in the melted butter, cream cheese, salt, and pepper. Slowly add the warmed half and half until you reach your desired creaminess.

  • Spread the mashed potatoes into a greased 9x13-inch baking dish. Dot the top with the remaining butter.

  • Bake in the preheated oven for 45 minutes, or until the top is golden brown and the edges are bubbly.
