Ingredients
  

  • 6 slices bacon
  • 6 large eggs
  • 1/2 cup cottage cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 cup shredded cheddar cheese
  • Nonstick cooking spray

Instructions
 

  • Preheat the oven to 300°F.
  • In a skillet over medium heat, cook the bacon until crisp. Drain on paper towels and crumble.
  • In a blender, combine eggs, cottage cheese, salt, pepper, garlic powder, and onion powder. Blend until smooth.
    Beaten eggs with flour and baking powder in a mixing bowl for baking recipes.
  • Stir in the shredded cheddar cheese and crumbled bacon.

  • Spray a muffin tin with nonstick cooking spray. Pour the mixture evenly into the cups, filling each about 3/4 full.

  • Fill a 9x13-inch pan with water, about 1/4 full. Position it on the bottom rack of the oven to generate steam for gently cooking the eggs.
  • Place the muffin tin filled with the egg bite mixture onto the middle rack of the oven. Bake for 20 to 22 minutes, or until the centers are set.
  • Let the egg bites cool in the pan for 5 minutes before removing. Serve warm.
