Nonstick cooking spray
Instructions
Preheat the oven to 300°F.
In a skillet over medium heat, cook the bacon until crisp. Drain on paper towels and crumble.
In a blender, combine eggs, cottage cheese, salt, pepper, garlic powder, and onion powder. Blend until smooth.
Stir in the shredded cheddar cheese and crumbled bacon.
Spray a muffin tin with nonstick cooking spray. Pour the mixture evenly into the cups, filling each about 3/4 full.
Fill a 9x13-inch pan with water, about 1/4 full. Position it on the bottom rack of the oven to generate steam for gently cooking the eggs.
Place the muffin tin filled with the egg bite mixture onto the middle rack of the oven. Bake for 20 to 22 minutes, or until the centers are set.
Let the egg bites cool in the pan for 5 minutes before removing. Serve warm.
