Ingredients
  

  • 4 Anaheim peppers halved and deseeded
  • 2 cups cooked chicken shredded
  • 1 cup corn kernels
  • 1 cup black beans drained and rinsed
  • 1 cup salsa mild or medium
  • 2 tablespoons taco seasoning mix
  • 6 ounces cream cheese softened
  • 1 cup cheddar cheese shredded
  • Fresh cilantro chopped (for garnish)
  • Sour cream for garnish

Instructions
 

  • Preheat your oven to 375°F.
  • In a mixing bowl, combine shredded chicken, corn, black beans, salsa, taco seasoning, and cream cheese. Mix well until all ingredients are evenly distributed.
