Flatbread White Broccoli Pizza – A quick lunch or dinner pizza that reminds me of home. White broccoli pizza with ricotta cheese and broccoli.

Whenever I go back to my hometown in New Jersey, I have to have a slice of broccoli pizza from Primo Pizza as soon as I get there. I dream about it, and it makes the long drive back to NJ tolerable because I know that I will soon have my favorite pizza on Earth. I love the thin crust, garlicky ricotta cheese, and the thick layer of mozzarella cheese that is melted over all of it. Broccoli might seem like a strange pizza topping, but it works perfectly with the creamy cheese and adds a little crunch. Primo’s makes a tomato and broccoli version and a spinach one, all good, but straight broccoli is my favorite.

I made my pizza on the grill, but you could easily just bake this in the oven. I love how the crust gets brown and the underside super crispy on the grill. I made a red sauce version for the kids and they loved this crust for their pizza. Perfect for a make-your-own-pizza party. It was a lot easier to grab some crusts out of the bag, and a lot less messy than rolling out the dough. I have been a long fan of Flatout and use them for sandwiches all the time, but it never really occurred to me to use them for pizza. I will from now on. I loved how this turned out.


Flatbread White Broccoli Pizza
Ingredients
- 1 package Flatout Thin Crust Flatbreads
- 1 8-ounce container of ricotta cheese
- 2 garlic cloves minced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon red pepper flakes
- 2 cups shredded mozzarella cheese
- 1/4 cup shredded Parmesan cheese
- 1 head broccoli
Instructions
- In a bowl, mix together ricotta, garlic, salt, pepper, and red pepper flakes.

- Spread about 1/4 cup of the ricotta mixture evenly on the crust.

- Sprinkle with cheese. Be generous.

- Add broccoli pieces.

- Grill over low heat. Cover and cook until the crust crisps up and the cheese melts.

- Let sit for a minute before slicing. Otherwise, the cheese will ooze everywhere.

- I like to sprinkle it with red pepper flakes and slice it.
