Ever hit that wall where you just can’t face another sad salad and you’re craving something that kinda gives your taste buds a pep rally? Fasten your seat belts, because you’re about to meet the salad that turned my dinner routine from average to great! Say hello to this healthy Brussels sprout salad – a tasty tornado of flavors!

Brussels sprouts may have a difficult reputation in the vegetable world and I have to admit that I mostly have them roasted. I’m about to prove why these petite leafy globes are ready to change your salad game. The secret sauce? Whittling those sprouts into delightful, tender niblets that even the fussiest eaters will find irresistible.

And the cherry on top – this salad is more than just a fiesta of flavors, it’s also a health-boosting hero. With Brussels sprouts, you’re basically biting into Mother Nature’s goodness.

Why You Will Love This Recipe

  • I think you will love the sweet pops of flavor with the cranberries and apples. They really help neutralize the bitterness of the Brussels sprouts.
  • As I said earlier, you are biting in Mother Nature’s green goodness.
  • It’s a really nice, quick salad to make, without being boring or bland.

Variations

There are quite a few ingredients here so lots of opportunities to make this salad your own!

  • Toss in some nuts or seeds to make it even crunchier – I’ve used almonds, pecans, roasted pumpkin seeds, and pine nuts and got raving reviews.
  • You can play around with other dressings like a sweet honey mustard vinaigrette or a creamy coleslaw dressing.
  • Add a bit of mayo into your dressing to make it creamy.
  • Fry up some bacon bits up and sprinkle it over the salad. Everything is better with bacon!

Tips and Tricks:

  • Don’t throw away the more rugged outer leaves of your Brussels sprouts. They might not be attractive, but they add great texture.
  • Leave the skin on when you slice the apple to add a pop of color.
  • Make sure you taste your dressing before adding it to your salad.

FAQs

Can I use a different type of apple?

Yes, you can use a green apple or even a pear instead of the red apple.

Could I add protein to this recipe?

Absolutely! You could add grilled chicken, fried bacon, or for a vegetarian version, chickpeas.

If I don’t have mint leaves, can I substitute them with another herb?

Of course, I sometimes use parsley or basil.

How to Store Healthy Brussels Sprout Salad

If you have leftovers, you can pop them in the fridge. This will keep your salad fresh for up to 3 days. I recommend this as the ideal storage solution, since the ingredients won’t hold up in the freezer.

If you’re preparing this salad but know you won’t be getting through the entire dish in one sitting, try to only dress the amount you will eat. Dressed-up leftovers will likely get soggy.
