Maybe you grew up eating it at your grandma’s, or it was a favorite meal as a kid; this combo of creamy chicken topped with toasty, buttery Ritz crackers is simple and hearty.

Store leftover Ritz cracker chicken casserole in an airtight container. Packed this way, leftovers will keep for up to 3 days in the refrigerator. You can also freeze leftovers for up to 2 months. Thaw overnight in the fridge before reheating. To serve, reheat servings in the microwave. Alternatively, to recrisp the cracker topping, place leftovers into your air fryer basket and reheat at 350°F for 5-7 minutes.

Serving suggestions

While Ritz cracker chicken casserole is delicious when made according to the instructions, there are plenty of easy variations. Try several to see which one you like best. First, you can toss in a bag of frozen mixed vegetables in step two. Or, you can sauté a diced sweet onion and eight ounces of sliced mushrooms and then add that mixture to the chicken. Ingredients
  

  • 4 cups cooked and shredded chicken
  • 10 1/2 ounces condensed cream of chicken soup
  • 1/4 cup milk
  • 3/4 cup sour cream
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 sleeve Ritz crackers crushed (about 30 crackers)
  • 1/2 cup unsalted butter melted
  • Green onions chopped (for garnish)

Instructions
 

  • Preheat your oven to 350°F. Lightly grease a 9×13-inch baking dish.
  • In a large bowl, combine the shredded chicken, cream of chicken soup, milk, sour cream, onion powder, garlic powder, Italian seasoning, salt, and pepper until mixed well. Spread the mixture evenly in the prepared dish.
  • In another bowl, mix the crushed Ritz crackers with the melted butter until evenly coated. Sprinkle the cracker mixture over the chicken mixture.
  • Bake in the preheated oven for 25-30 minutes or until the cracker topping is golden brown and the casserole is hot and bubbly.
  • Remove from the oven and let cool for 5 minutes before serving. Garnish with green onions.
