This easy Peach Cobbler Recipe is destined to become a summer favorite. It’s delicious with vanilla ice cream!

There’s just something about a plate of warm peach cobbler topped with a scoop of vanilla ice cream. The warm, sweet fruit and biscuit-like topping make for the perfect landing spot for a scoop of vanilla ice cream. A little bit of puddling as the cold ice cream hits the warm cobbler? Yes, please!

Americans fell for cobblers way back during colonial times. They’re easy to make and a great way to use up fresh fruit during the summer harvest season. While they may not be fancy, they are delicious. Peaches, cherries, berries, and plums all make excellent cobblers.

You will love this peach cobbler because it puts those beautiful summer peaches to good use. The peaches are mixed with a little brown sugar, but still retain all those sunny flavors. The topping is tender on the inside and just a little crisp on the outside. Plus, this dessert just has such a lovely rustic appeal! You’ll be making it on repeat this season!

Ripe Peaches: Plan Ahead!

If you’ve ever bought fresh peaches from your supermarket or a farm stand and taken them home, ready to bake a delicious cobbler, you may have been disappointed. Usually, when you buy peaches, they are rock-hard. In order to get peaches to the right state of ripening, buy them 2-3 days before making the cobbler and set them out on your counter. Once they are slightly soft to the touch, they’re ready. You’ll also want to use freestone peaches, as their pit is much easier to remove.

How Do I Store Leftovers?

Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Bear in mind that it will become a little soggy after a while. Freezing is not recommended, as the texture will be affected upon thawing.

Serving Suggestions

Ingredients
  

  • 6 large peaches peeled and sliced
  • 1/3 cup brown sugar
  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter melted
  • 1 1/2 teaspoons vanilla extract
  • 2 teaspoons baking powder
  • Ground cinnamon for sprinkling

Instructions
 

  • In a large bowl, combine the sliced peaches and 1/3 cup of brown sugar. Set aside.

  • In another large bowl, mix together the flour, granulated sugar, salt, melted butter, vanilla, and baking powder until a dough forms.

  • Preheat your oven to 350°F. Evenly distribute the peach mixture inside a greased 9×13-inch pan.

  • Place small scoops of the dough all over the top of the peaches to cover them. Sprinkle the top generously with ground cinnamon.
  • Bake in the preheated oven for about 40-45 minutes, or until the top is golden brown and the peaches are bubbly. If desired, finish baking the cobbler under the broiler to brown it more. Serve warm.
