I live in Ohio, where summer is truly fleeting. But I’ve learned to make the most of our one warm season! I haunt our local parks and hiking trails, splash at local swimming holes as much as possible, and enjoy meals alfresco at every opportunity.

Once I learned how to boil corn on the cob, my summer savoring truly leveled up. It’s the quickest and easiest way to enjoy the fresh corn that’s available from local growers for only a short time. No matter what I’m making for the main course—be it grilled burgers, chicken salad, or the walleye my brother fishes out of Lake Erie—corn boiled to vibrant perfection is the ultimate complement.

And you can make this dish as plain or fancy as you like! A pat of butter and sprinkle of salt is the classic way, but a dusting of Old Bay seasoning brings in East Coast vibes. Or mix your softened butter with fresh herbs like cilantro, basil, dill, or chives before slathering it on your corn for a delightfully herbaceous twist.

Will frozen corn on the cob work in this recipe?

Yes! Frozen corn on the cob is a readily available, convenient alternative that boils just as well as fresh. And it lets you enjoy the sweet flavors of corn year-round! Most major grocery stores carry packages of frozen corn on the cob, either as whole mini-cobs or half-cobs. They’re typically harvested at peak ripeness and flash-frozen to preserve flavor and texture.​

You don’t even need to thaw your frozen corn—just place it directly into the boiling water. Then add a few extra minutes to the cooking time, usually totaling five to seven minutes, or until the kernels are bright, hot, and tender.

How do I store leftovers?

Let your boiled corn on the cob cool completely, then wrap each ear individually in plastic wrap and place them in an airtight container. They’ll keep in the fridge for up to 4 days. Reheat in the microwave in short bursts or briefly in a pot of boiling water until heated through.

I do not recommend freezing the full cobs, as the texture of the corn will soften and become unappetizing after thawing. But you can slice the kernels off the cob and freeze them for up to 3 months in a freezer-safe bag with as much air removed as possible. Reheat on the stovetop or in the microwave—or use directly from the freezer in soups, stews, or casseroles.

Ingredients
  

  • 4 ears corn on the cob husks and silk removed
  • 1 tablespoon butter or to taste
  • Salt and pepper to taste

Instructions
 

  • Fill a large pot about halfway with water and bring to a rolling boil. Season generously with salt.
  • Carefully submerge the cleaned corn in the boiling water and cover the pot. Boil for 3-5 minutes, until the kernels turn a vivid, bright yellow and are plump and just tender when pierced with a fork or knife. Do not overcook.
