Healthy Strawberry Popsicles – Healthier strawberry popsicles, pureed strawberries, honey or agave, and lemon juice frozen in molds perfect for hot days.

Today, my friend Alison is sharing her recipe for Strawberry Popsicles with us. Alison’s blog is one of my all-time favorites and I look forward to each and every post. Her recipes are healthy and delicious and she inspires me to eat fresh and clean. Her photography is nothing short of breathtaking and she is a breath of fresh air. Just a few weeks ago we made our summer lists. It’s a tradition we started a few years ago to help us make the most of our summer days. The boys and I each make a list of 10 things we’d like to do before heading back to school in August. This year’s lists include going to a major league baseball game, having a lemonade stand, and picking strawberries at a local farm.

Last year, when we made our lists, ‘make our own popsicles’ was one of the things we wanted to try. We got some great molds and made a few of our own with popsicle sticks and paper cups. Little did we know how much we would LOVE making them and that it would quickly become a favorite summer treat. This year we’ve gotten a bit more serious about our popsicle making and I ordered some fun ring pop molds as well as those used below.

We’ve tried many different recipes but always come back to those with strawberry or lemon flavors. There is just something about the sweet, tart taste that is so refreshing on hot summer days. This recipe is a great combination of both.

Healthy Strawberry Popsicles

Ingredients
  

  • 3 cups fresh or frozen, thawed strawberries, hulled and halved
  • 1/2 cup honey or agave syrup
  • 3 tablespoons fresh lemon juice

Instructions
 

  • In a food processor, or blender combine the strawberries, honey and lemon juice. Process until smooth. Pour puree into molds and put in freezer. Freeze until solid, at least 4 hours.
