Artichoke season coincides perfectly with the beginning of grilling season. So I thought, what better way to honor them both than with this delicious grilled artichoke recipe. The char from the grill seems to bring out the natural earthy flavor of the artichokes and pairs perfectly with the slight sweetness of these beautiful vegetables. Artichokes are often overlooked because people think they are a lot of work. I will admit they are not the easiest veggie to prepare but they are absolutely worth the extra effort.

This grilled artichoke recipe is always a hit at any BBQ, event, or picnic. The prep can easily be done ahead of time so all you have to do is show up and grill these delicious little guys. They come off the grill tasting tangy, citrusy, and bright with just the right amount of char and savoriness. One of my favorite springtime side dishes, they go great either on their own as a wonderful snack or paired with your favorite entree. Plus they are great finger food and I always love it when I get to use my hands to eat, it makes me feel like a kid again.

Another Healthy and Delicious Side…

Not only are these grilled artichokes delicious, they are also incredibly healthy and nutritious. These beauties are low in carbs and contain, iron, potassium, calcium, and protein, as well as vitamins A and C. The olive oil provides heart-healthy fat and the garlic gives you an extra boost of heart-healthy vitamins as well. This is a wonderful dish for all of your guests, it’s vegan and vegetarian and gluten-free, perfect for anyone at the table.

FAQs & Tips

How to Make Ahead and Store?

To make these grilled artichokes ahead of time there are a couple ways that I prefer.
First, you can blanch the artichokes in the boiling water, then cool them off and store them in the fridge in an airtight container until you’re ready to grill them.
Second, you can cook them and finish them on the grill, then either keep them warm in a 200°F oven, or you can cool them off and save them for a later time. The artichokes will last up to five days in the fridge or up to three months in the freezer.
To reheat, simply place on the grill for a couple minutes each side or until the artichokes are heated through. Alternatively, they are incredibly delicious cold as well.

How Can I Stop My Artichokes Discoloring?

When preparing multiple artichokes, or if you’re going to wait a little while before cooking them, I suggest you soak the prepared artichokes in a bowl of acidulated water, which is just water with a bit of lemon juice in it. The citric acid in the lemons will keep the artichokes from turning brown.

Serving Suggestions

As I mentioned earlier, these grilled artichokes are incredible all on their own. I love to dip them in a myriad of sauces, like garlic Parmesan butter, or a lemon or garlic aioli. Some of my friends even use Italian dressing and other vinaigrettes as a dipping sauce as well. Ranch or blue cheese are favorites among the kids, and adults alike.

Ingredients
  

  • 2 large artichokes
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon chopped fresh parsley
  • 1 clove garlic minced

Instructions
 

  • Trim the artichokes by cutting off the stem and the top third of each artichoke. Remove the tough outer leaves and snip off any sharp tips from the remaining leaves.
  • Cut the artichokes in half lengthwise and scoop out the fuzzy choke with a spoon.

  • Bring a large pot of salted water to a boil. Add the artichoke halves and cook until tender, about 15 minutes. Drain and let cool slightly.
  • In a small bowl, mix together olive oil, lemon juice, parsley, and minced garlic.
  • Preheat the grill to medium-high heat.
  • Brush the artichokes with the olive oil mixture, making sure to get between the leaves.
  • Place the artichokes on the grill, cut side down, and grill for 5-7 minutes or until they have nice grill marks.

  • Flip the artichokes and grill for an additional 5 minutes.
  • Serve warm, with additional olive oil mixture for dipping if desired.
