If you’re a pancake lover, you’ll want to indulge in my Cinnamon Bun Pancakes. Fluffy and sweet, they’re a great alternative to cinnamon buns.

When two people tell you that these are the best pancakes they have ever eaten, then you know that they are good. These pancakes are exactly what you want when you are craving a cinnamon bun but do not have the time to make them. These are sweet, cinnamony, and fluffy.

To make something delicious over the top, instead of maple syrup — also delicious — top them with cinnamon bun icing. Nothing short of amazing.

What To Serve With Cinnamon Bun Pancakes

Fresh fruit: A side of fresh fruit such as berries or sliced bananas can refresh your palette and yes, bring some vitamins to the proceedings. You can serve the fruit atop the pancakes or on the side as part of this Citrus Mint Fruit Salad.

Cream cheese: Some readers have suggested adding cream cheese, vanilla, and lemon to the frosting. This will obviously thicken the syrup to the point you won’t be able to pour it but if you don’t mind spreading it on, it will taste delicious. I think that they will hold up just fine. I think that the syrup is just for flavor. The original recipe calls for corn syrup but I substituted maple syrup instead.

How To Store Cinnamon Bun Pancakes

Let the pancakes cool completely. Store in an airtight container then put in the fridge where they can be kept for up to 4 days. To reheat, you can use either the microwave (zap them for 30-60 seconds) or the toaster oven for 5-10 minutes. You can also freeze them for up to 3 months. Just let them thaw in the fridge overnight before following the above steps for warming them up. For another delicious breakfast treat, you might enjoy making cinnamon rolls.

Ingredients
  

For the dough:

  • 1 1/2 cups flour
  • 3 Tablespoons sugar
  • 1/2 teaspoon salt
  • 4 teaspoons baking powder
  • 1 Tablespoon cinnamon
  • 2 eggs beaten
  • 1 cup milk
  • 2 Tablespoons maple syrup
  • 1/4 cup melted butter
  • 1 Tablespoon vanilla
  • 1/2 cup raisins optional

For the frosting:

  • 1 cup confectioners sugar
  • 2 Tablespoons melted butter
  • 2 tablespoons milk

Instructions
 

  • Put all of the dry ingredients in a bowl.
    Finely sifted flour, cinnamon, sugar in a mixing bowl for baking recipe.
  • Whisk the dry ingredients together.

  • Add the wet ingredients and whisk together until well combined. Add the raisins.

  • Preheat a griddle or large saute pan over medium heat. Cook until brown on both sides.

  • They are delicious just like this but even better with frosting.
  • Whisk the ingredients for the frosting together until smooth and a pouring consistency. If too thick add more milk, if too thin, add more sugar. These pancakes are the perfect way to start a day. Make some and share them with someone you love.
