But put a bunch of candles on a cake, and no one bats an eye. That’s how connected cake has become to our birthday celebrations.

But I would actually argue that the cake itself is not really the point. Sure, it’s delicious, but for me, the cake is more like a symbol. It’s a representation of a person’s love because the act of making a cake for someone is inherently an act of care and appreciation. You have to mix the flour and sugar, crack the eggs, whisk the buttermilk, pour the batter, place the cake in the oven, and wait patiently while it bakes. Then, once it has been removed from the oven and given enough time to cool down, you have to carefully frost the cake—all of which takes time and energy.

Now, I don’t want to begrudge anyone who buys cakes from the store because I understand that with work, family responsibilities, household chores, and so on, it’s often difficult to find the time to labor in the kitchen over a dessert for an hour or more. But I will say that for me, there’s something about a homemade cake that is just superior to anything you can buy. It’s not about the flavor, mind you. I’m sure you can do a quick search on your phone and find a local bakery that makes cakes that are more delicious and pretty than anything you or I could make ourselves. But even if someone made me a cake from one of those cake-mix boxes you can buy at the grocery store, I would still prefer that because that person still took the time to bake it themselves. As cliché as it is to say, it really is the thought that counts.

Luckily, this recipe for Chocolate Birthday Cake is the best of both worlds. It is both super easy to make and also just as delicious as any cake you can buy.

The secret to moist cake

Look, I know some people don’t like the word “moist,” but just bear with me on this because it’s worth it. If you’ve ever taken a bite of a beautiful cake only to realize it is dry and crumbly, then you’ll know the importance of ensuring your cake remains moist and vibrant.

The secret is buttermilk. Compared to regular milk or water, the fat content in the buttermilk ensures that the cake remains spongey, tender, and moist. Trust me—the reason cake at the bakery tastes so good is because the baker is no doubt using buttermilk in their cake batter. Once you try it, you won’t ever go back.

Ingredients

  • 2 cups granulated sugar
  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs, room temperature
  • 1 cup buttermilk, room temperature
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract

  • 2 1/2 cups confectioners’ sugar
  • 1/2 cup unsweetened cocoa powder

How to Make Chocolate Birthday Cake

Step 1: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Step 2: In a large bowl, whisk together sugar, flour, cocoa powder, baking powder, baking soda, and salt.

How to Make Ahead and Store?

This cake can easily be left out at room temperature for up to 2 days, so long as you place it in a sealed container or wrap it in plastic wrap. It can last a few days longer in the fridge, but the cake may dry out due to the cold temperature.

Can I Use Milk Instead of Buttermilk?

The short answer is yes, you can. Although, be warned: your cake will likely turn out a bit more dry and crumbly than if you used buttermilk.

Why Do Ingredients Have to Be Room Temperature?

If you use cold eggs, cold butter, or cold buttermilk in your cake, the final result probably won’t be a disaster, but what you want is for your cake batter to be at a consistent room temperature throughout. If you use too many cold ingredients, they won’t blend together as nicely when you make the batter, and some ingredients might not be evenly dispersed.

Serving Suggestions

If you want to be like the little boy in the movie “Matilda” and eat a whole chocolate cake by yourself, then I congratulate you. I also would like to say that there is absolutely nothing wrong with making a cake for no reason at all. There’s something great about having a slice or two as a dessert every night after dinner.

For most people, however, this cake is probably best served with a group of people at a birthday party or other event. In that case, I highly recommend keeping it simple and serving this cake alongside some vanilla ice cream. Some things are classic for a reason, and you can’t go wrong with that combo.
