These Creamy Cheesy Mashed Potatoes are a decadent delight, spoonful after indulgent spoonful, a real crowd-pleaser.

One of my all-time favorite side dishes is mashed potatoes, and this cheesy mashed-potato recipe takes the cake. These spuds are soft, fluffy, savory, tangy, and oh so ooey gooey. They are a decadent delight, spoonful after indulgent spoonful. In fact, they are so good, I have eaten them all by themselves.
In my opinion, these cheesy mashed potatoes are a near-perfect dish. Just the right amount of cheese, hints of savory garlic, and a lovely tang from the sour cream. Top it all off with some freshly minced chives and the whole dish sings with incredible bold flavors. This is one of those dishes the whole family absolutely loves and asks for time and time again.

Are Potatoes Healthy?
Potatoes themselves can be quite healthy. A medium-sized potato contains calcium and is also a wonderful source of fiber, iron, and potassium; they even have trace amounts of vitamin C. You can also reduce the amount of calories by using a low-fat sour cream.

FAQs & Tips
How do I store these mashed potatoes?
These cheesy mashed potatoes can be made ahead of time and kept warm or cooled down and reheated when you are ready to serve them. This is one of those dishes that is best served hot and fresh, but it does reheat very well and can be stored in an airtight container in the fridge for up to five days, or stored in the freezer for up to three months.
How can I reheat these cheesy mashed potatoes?
Reheating these potatoes is a snap and I recommend a couple of different ways. One way is to add your already-cooked potatoes to a sauté pan with a pat of butter and a touch of half ‘n’ half or a bit of sour cream, then heat over medium-low heat until the potatoes are nice and hot. Another method sees you place the cooked potatoes in an oven-safe dish and bake in a 350°F oven for 20-25 minutes. This method gives the potatoes an addictive crunchy top layer.
How can I ensure my potatoes stay nice and fluffy?
A wonderful tip I learned from a chef friend is to make sure that the butter, half ‘n’ half, cheese, and the sour cream are at room temperature. Adding cold ingredients to your warm mashed potatoes can cause the potatoes to seize up and harden. You also want to be sure not to overmix the potatoes either as this too can cause your potatoes to become dense and starchy.

Serving Suggestions
As I mentioned earlier, these cheesy mashed potatoes are the perfect side dish, but can be a meal all their own, especially if you bulk up the toppings. I tend to go a little overboard and do the whole “loaded mashed potato” thing. I love adding some bacon bits, fried garlic, more cheese, some sautéed mushrooms and a dollop of sour cream. Then this side really does become a meal in itself.
