Cure that chocolate craving in minutes with this delectable Brownie In A Mug.

I can’t always predict when the craving for chocolate will hit, and while sometimes a bite of a chocolate bar or even a couple of semi-sweet chocolate chips will do the trick, other times, more is called for. Sure, I could make a whole pan of brownies, but my hubby is not a chocolate fan, and I certainly do not need the temptation an entire pan of brownies presents! Brownie in a mug is just right for a serving of chocolaty goodness.

The key to good brownies is the texture. A dense, slightly chewy texture makes for a fudgy, rich taste. With that goal in mind, this recipe does not have any baking powder or baking soda, both of which are leavening agents. The result is a perfectly fudgy brownie that is thicker and denser than cake texture.

You will love brownie in a mug because it is easy, makes one serving (but is easily doubled to make two if you need it!), and cooks up quickly in your microwave. You probably already have the ingredients in your pantry, and you don’t need any fancy equipment. Your biggest dilemma might be which mug to use. I suggest a large mug, free of any decoration or metallic trim (so it’s microwave-safe).

Understanding unsweetened cocoa powder

When you open a container of unsweetened cocoa powder, the smell is divine. Rich and chocolaty, it’s tempting to dip your finger in for a taste. However, you might be in for a shock. Unsweetened cocoa powder is packed with rich chocolate flavor, but without any sweeteners, it’s bitter to taste. The powder is made from the solids left behind after cacao beans are processed and the cocoa butter is removed. You can use it in everything from bakes to hot chocolate and smoothies. I even add a dash to my chilis for a slightly smoky depth of flavor. Just remember to always add sugar or your favorite sweetener if you’re using it in desserts or drinks!

How do I store leftovers?

Since this recipe only makes one serving, there may not be a lot left over. However, if you can’t finish your serving or want to save some for later, you can store it in the fridge (once it’s cooled) for up to 3 days. Just keep it covered and reheat slowly and gently in the microwave, or enjoy it cold.

Serving suggestions

A scoop of Vanilla Ice Cream is wonderful if you’re looking for a classic taste, or mix it up with a scoop of Strawberry Ice Cream. Alternatively, you can top your brownie with Homemade Whipped Cream. Once you master this basic recipe, try some variations. Stir in a teaspoon of espresso powder for a lovely mocha flavor, a tablespoon of chopped walnuts or hazelnuts, or a teaspoon of raspberry jam before cooking. Use your imagination!

Ingredients
  

  • 3 tablespoons all-purpose flour
  • 3 tablespoons granulated sugar
  • 2 1/2 tablespoons unsweetened cocoa powder
  • Pinch of salt
  • 2 tablespoons melted butter
  • 3 tablespoons milk
  • 1 splash vanilla extract
  • 2 tablespoons semi-sweet chocolate chips
  • Ice cream for serving, optional

Instructions
 

  • In a large microwave-safe mug, mix together flour, sugar, cocoa powder, and a pinch of salt.

  • Add melted butter, milk, and vanilla extract to the mug. Stir until the mixture is smooth.
