When special occasions roll around, I often reach for Brie. Whether I’m placing it on a cheese board or serving a gorgeous baked Brie wrapped in puff pastry, there’s something about this soft, buttery cheese that elevates everything and makes the event feel a little more fancy.

Here’s a secret: You can capture this same elevated vibe in an easy weeknight dinner. This simple pasta dish—where you can use the pasta of your choice—sees creamy Brie melt over warm noodles, accented by earthy shiitake mushrooms, sweet peas, and salty Parmesan cheese. You’re left with a silky sauce that coats every noodle. It’s indulgent and satisfying, but not too heavy.

I also love how adaptable this recipe can be. If you want to add more protein, toss in some grilled chicken. For more veggies, stir through some sautéed spinach or top the pasta with roasted broccolini. It’s a blank canvas that you can totally mold to your preferences.

Which type of pasta should I use?

That’s totally up to you. As you can see from the photos, I use farfalle (bowtie) pasta because it catches the sauce and can cradle the mushrooms and peas. For similar reasons, I also like using fusilli (spirals) and shells. Depending on what type of pasta you want to use, cooking times will vary. Use the reference sheet below:

How do I store leftovers?

Let your pasta cool completely. Then, store leftovers in an airtight container and keep them in the fridge for no longer than 5 days. You can also freeze leftovers for up to 3 months. Let them thaw in the refrigerator before warming them up in the microwave or on the stovetop.

Serving suggestions

This dish is great served with a side salad and a hefty hunk of crusty bread, perfect for dipping into your sauce. Ingredients
  

  • 4 ounces dried pasta
  • 4 ounces Brie cut into small pieces
  • 1/2 cup shiitake mushrooms sliced
  • 1 tablespoon extra-virgin olive oil
  • 2 cloves garlic minced
  • 1/4 cup heavy cream
  • 1/4 cup green peas
  • Pinch salt and black pepper
  • 2 tablespoons Parmesan grated

Instructions
 

  • Cook the pasta according to package instructions, then drain and set aside.
    Farfalle pasta in a stainless steel sieve on white marble surface.
  • While the pasta is cooking, cut the Brie into small pieces and thinly slice the shiitake mushrooms.

  • Heat a saucepan over medium-high heat and add the olive oil. Sauté the shiitake mushrooms for 3 minutes then add the minced garlic and cook for another minute.

  • Add the heavy cream to the saucepan and reduce the heat. Simmer the sauce for 5 minutes then add the Brie. Stir until the Brie has melted in the sauce.

  • Remove the saucepan from the heat, then add the pasta and the green peas. Season with a pinch of salt and pepper, to taste. Stir until the pasta is coated with the sauce.

  • Transfer the Brie pasta to plates and top with the grated Parmesan.
