If you’re familiar with Bisquick, the easy-to-use mix of flour, shortening, leavening, and salt, you know it’s the most convenient go-to for making fluffy pancakes and waffles. And, as its name implies, biscuits! You might also use it in quick breads, cobbler topping, or even to make pizza crust. But I wonder if you’ve discovered what happens when you mix Bisquick into the wet ingredients in a casserole. If not, prepare to be amazed when you make this Bisquick breakfast casserole.

Here’s what makes this recipe so special. Many breakfast casserole bases are a combination of eggs beaten with milk, cream (or both), and cheese, creating a custardy texture—somewhere between scrambled eggs, an omelet, or a quiche. Some popular versions of breakfast casseroles also contain bread. But when you add Bisquick baking mix to the egg and milk mixture in the recipe we are presenting today and then add browned sausage and cheddar cheese, the end result—after baking, of course!—is a breakfast casserole with a mouthwateringly fluffy yet sturdy texture. And big-time delicious flavor, too.

One thing I absolutely love about the recipe for Bisquick breakfast casserole is how simple it is to achieve this level of savory deliciousness with so few ingredients. Once you’ve added the Bisquick to the egg and milk mixture, all you have to do is fold in browned and crumbled sausage and cheddar cheese, transfer it to a prepared baking dish, top with more cheese, and stick it in the oven. Half an hour or so later, you’ll be sitting down to a savory, cheesy breakfast treat.

Perfect Bisquick Breakfast Casserole

Start by browning your sausage thoroughly. Browning meat creates an amazing deep and savory flavor and adds great texture to this dish, too. Drain off all the excess fat from the meat. Next, mix the eggs and milk, along with the salt and pepper, thoroughly, but then add the Bisquick until it is just combined. Grate your own cheddar cheese for the best flavor. Let the casserole rest for a few minutes once you’ve taken it out of the oven to ensure easy slicing. Now, all you have to do is enjoy!

How Do I Store Leftovers?

Cooled Bisquick breakfast casserole can be stored in an airtight container in the refrigerator for 3-4 days and in the freezer for up to 2 months. Thaw in the fridge overnight before reheating.

Bisquick breakfast casserole is really scrumptious on its own, but sometimes I like to add some things for even more texture and flavor. Fajita Veggies are delicious layered into this casserole, as are Home Fries. And then I love to serve Mexican Crema, Ranchero Sauce, or Green Enchilada Sauce to put on top.

Ingredients
  

  • 16 ounces bulk pork sausage
  • 4 large eggs
  • 2 cups whole milk
  • Kosher salt to taste
  • 1/4 teaspoon black pepper
  • 1 1/2 cups Bisquick baking mix
  • 2 cups shredded cheddar cheese

Instructions
 

  • Preheat the oven to 350°F and lightly grease a 9×13-inch baking dish.
  • In a skillet over medium-high heat, cook the pork sausage until browned and crumbled, about 7 minutes. Drain any excess fat.

  • Combine the eggs, milk, salt, and pepper in a large bowl. Mix well. Stir in the Bisquick mix until just combined. Fold in the cooked sausage and 1 cup of cheddar cheese.

  • Pour the mixture into the prepared baking dish. Top with the remaining 1 cup of cheddar cheese. Bake in the preheated oven for 30-35 minutes, or until the casserole is set and golden brown on top.
