Double your weeknight dinner fun with this quick and easy recipe that wraps the flavors of a fast-food fave in a warm, comforting tortilla!

Sometimes, combining two favorites can result in a mashup that’s even better than the originals. Case in point: the Linkin Park-Jay-Z collaboration, “Numb/Encore.”
These delicious Big Mac tacos are the culinary equivalent of that chart-topping, genre-crossing success. They combine the zesty, complex flavors of a Big Mac with the crispy crust of a smash burger—all folded into a warm, chewy tortilla. Use this recipe to amp up your taco or burger night with a fun touch of nostalgic whimsy.
You’ll love how quickly and easily this dish comes together. In well under half an hour, you can serve up a fresh twist on the typical handheld that’s still comfortingly familiar. I love making these tacos on a weeknight because they feel like a fun escape from adulting. But they’re also a hit with my nieces and nephews when I whip them up for a fast weekend lunch.

The science behind the sauce
What makes Big Mac sauce so craveable? Chemistry! Mayonnaise provides creamy body, ketchup adds sweet-tart balance, mustard brings sharpness, and a hit of vinegar wakes up the palate. Garlic powder, paprika, and a bit of salt round out the flavors, while the topping of chopped pickles supplies tang and crunch. These elements work together to hit all the sensory notes—fat, acid, sweet, and spice—which is why the sauce stands up so well to rich beef and melty cheese.
When building your own version, feel free to tweak the amount of each component. That way, you’ll get a perfectly customized range of richness, acidity, sweetness, and spice in every bite.

How do I store leftovers?
Smash burger tacos deliver the best experience when they’re freshly made. If you have leftovers, store them without sauce or toppings in an airtight container or resealable bag in the fridge for up to 2-3 days. Leftover Big Mac sauce will keep for up to 4 days in an airtight container or jar in the fridge.
You can freeze just the beef-tortilla layer for up to 1 month in a freezer-safe container or bag—but expect the tortilla’s texture to soften. Thaw overnight in the fridge. Reheat in a 350–400°F oven or air fryer for 4–6 minutes, or tortilla-side down in a hot skillet, until piping hot. Avoid reheating in the microwave, as that will make the tortilla soggy. Add sauce and fresh toppings just before serving.
