Even when weeknights feel rushed, I still often crave something homemade on the dinner table. The last thing that I, or anyone else in my household, wants to do after a long day is spend hours in the kitchen. The good news is that there are plenty of recipes out there that put a restaurant-worthy meal at your fingertips in less than half an hour. This easy baked cod is one of them.

This recipe really doesn’t ask for much. The cod gets coated in chopped garlic, some spices and herbs, and fresh lemon rounds, then it bakes in the oven for around 15 minutes. It comes out fragrant and delicate, easily flaking apart with a fork while the citrus and herbs liven up each bite.

My grandmother used to make something similar when I was a kid, and I thought this was a fancy, upscale sort of dish that required a lot of time and expertise to put together. Not so. Anyone can do it, and you should give it a go for your next busy mid-week meal.

Switching things up

Cod is a versatile fish. While these flavors are delicious as is, you can switch things up depending on your mood. For example, for more Mediterranean flair, add chopped kalamata olives and halved cherry tomatoes. For a little hint of smoke, add some chili powder or smoked paprika. For heat, go with chili flakes or a dash of cayenne powder. For more richness, add a tablespoon of butter to the roasting pan. You could also swap out the dill for parsley, oregano, thyme, or basil.

How do I store leftovers?

If you have leftovers, store them in an airtight container in the fridge for up to 2 days. Reheat gently in the oven at a lower temperature, around 275°F, just until warmed through to maintain a tender texture.

Serving suggestions

Ingredients
  

  • 1 tablespoon olive oil
  • 4 portions of cod
  • 2 cloves garlic chopped
  • 1 teaspoon paprika
  • 2 teaspoons dill
  • Salt and pepper
  • 3 slices lemon

Instructions
 

  • Heat the oven to 400°F.
  • Drizzle olive oil in an oven-safe dish. Add the fish in a single layer. Sprinkle on the garlic, paprika, dill, salt, and pepper, and add the slices of lemon.
